Today I made eggs baked in portobello mushrooms.
All you need is 3 eggs, 3 mushrooms (stem removed and wiped clean) all to taste- garlic powder, parmesan cheese, salt, pepper and olive oil spray.
Preheat the oven to broil, and spray mushrooms with the oil. Season with salt and pepper.
Broil for 5 minutes on each side.
Place eggs in each mushroom. Switch the oven to bake and set at 400.
Cover the eggs with the rest of the ingredients, plus more salt and pepper.
Bake for 15 minutes, until the egg whites are cooked.
They were “eggcellent”, so I ate all three!
