Today I made an Enchilada Tater Tot Bake. I got the recipe from The Country Cook where you can find the full ingredients list.
First brown the ground beef with onions and garlic. Then drain the excess fat and add the fajita seasoning.
Then add the enchilada sauce and frozen tater tots.
Add LOTS of cheese…
…and bake! The recipe says to top with olives but I opted to tater-not.
It was so delicious and I can’t wait to make it again.
