It’s winter and the weather is cold and bitter so I decided to make something warm and comfy, like lasagna soup.
First, add olive oil, onions, garlic, thyme, cumin, cloves, salt, pepper, oregano, onion and garlic powder to a large pot on medium-high heat along with any kind of sausage or meat or of course no meat at all. I used beef because that is what I had. Italian sausage would be ideal. Let it cook until the sausage is brown.
Then add tomato sauce, paste, beef or chicken stock and bay leaves. Let it cook until it starts to boil.
Add un-cooked lasagna noodles and let them cook until they are done. Add ricotta cheese and serve.
Then you can curl up read a book and enjoy your newly made lasagna soup.
