Today I decided to use my favorite candy to make my favorite cookies! Peanut butter! I got the recipe from i am baker, follow the link for the full ingredient list for these cookies, for the overview read down below.
First start with a ton of Hershey’s Kisses…
…and a lot of peanut butter, sugar and unsalted-butter in the bowl of a stand mixer for 2 minutes on medium speed.
Then add in the egg, milk, vanilla, and red food coloring. (Don’t eat too many cookies or you might be caught “Red Handed”) Mix for about 30 seconds to incorporate, then turn mixer to high and blend until light and fluffy.
The cocoa, baking soda, salt and flour are sifted together in a separate bowl. While the mixer is on low add the flour mixture to the sugar mixture until combined.
If you are reading this out loud to someone apologize for the terrible pun and carry on by rolling your balls (my mom is still laughing from the previous word) in red sanding sugar.
If you (like me) do not have red sanding sugar and are too lazy (again also like me) to go buy some then do the following…
Get regular sugar (as much as you like) and mix it with a few drops of red food dye, sift after it is mixed and again before using and there you have, red sanding sugar.
Bake on a non-modified (without baking grease or parchment paper) baking sheet at 375 for 8-10 minutes.
Immediately after they are out of the oven stick a kiss in the middle of the cookie. It should crack around the edges and the kiss should start to collapse onto itself. Let the cookie cool and enjoy.
I added two kisses to some of the cookies because I really like chocolate!
