For the next few weeks I am going to try to eat lots of different and unusual foods.
Like for instance beets. I have never eaten a beet before but I have always wanted to.
Plus, I know a favorite chef of mine who uses them, Gordon Ramsey. He uses beets for the beet salad in Hell’s Kitchen. But he always uses them raw.
However, I found a recipe for roasted beets. All you have to do is peel them, cut them and lay them on a sheet tray.
Then toss them with a little olive oil, fresh thyme, salt and pepper and thats it. 🙂
I baked them at 400 degrees for 40 minutes. So, I just tried them and I love them. When they are raw they have a subtle sweetness but when cooked the flavor explodes!
