Today I wanted to make S’mores cookies. For the full recipe go to Together As Family blog.
First in a small mixing bowl combine graham cracker crumbs, flour, baking soda, and salt and wisk until combined.
Then in a larger bowl (though the recipe says to do it with a handheld electric mixer and I did it with my KitchenAid) I mixed together the butter and sugars until combined. I used my homemade brown sugar!
Add the vanilla and egg and mix well. The vanilla extract is also homemade!
Add the dry ingredients to the mixture and mix on low speed until combined.
Next…BRING FORTH THE CHOCOLATE! (no I’m not obsessed) Get your chocolate ready by breaking Hershey bars into little pieces.
Scoop the cookie dough into a mini muffin pan and bake for 8 minutes at 350 degrees. Once the base has baked make a small indention with what ever decent sized measuring spoon you managed to remember not to throw in the sink.
Fill with half of a large marshmallow.
Turn the broiler on and put the pan under the broiler for 1-2 minutes. Don’t forget the chocolate. (Still not obsessed) Add one piece of chocolate on top of the marshmallow and enjoy!
The chocolate might melt slightly… just slightly though.
Let it cool and snuggle up to your pretend fireplace with these delicious cookies.
