Today I decided to make a tex-mex skillet. I got it from the Six Sisters Stuff blog.
First start by boiling water for rice. I used brown rice but if you are looking for a super quick meal just go for regular white.
Then pour a little of the beef broth in a skillet and cook the onions until golden brown and delicious.
Then add meat and lots of spice!
Add corn, tomatoes, tomato sauce and garlic.
Add lots of cheese and mix the rice in also. Then add more cheese on top and let it melt.
In this recipe it calls for turkey but I say it’s ok to use whatever protein available. I used grass fed beef that I got from my Grandma’s friend’s farm. And the recipe calls for beans I skipped that step too. Just add a little extra meat and you will be fine. Of course you could always add extra even with the addition of beans. It’s perfect in burritos.
